Physical properties

How it’s made
Produced by cleaning and dehulling pumpkin seeds, followed by cold-pressing or solvent extraction to remove oil. The resulting seed cake is defatted, dried, and milled into flour. Protein concentrate (60-70% protein) is made via further processing to remove some carbohydrates and fiber. Protein isolate (80%+ protein) is produced using alkaline extraction and isoelectric precipitation or ultrafiltration to concentrate the protein fraction.
